Lately my workout has been quietly crawling into the pending to-dos list, but to make up for that I am trying my best to eat well. Salads have become my go to meal for the evenings. And seriously making a delicious bowl of salad isn't a hard task. Just some good ingredients, little bit of imagination and you can toss a great concoction. In my latest experiments I tried some assorted lettuce with strawberries as the main note and it turned out really well. Ingredients/Recipe (Serves 2) - 6 leaves of iceberg lettuce - 6 leaves of Romaine lettuce - 3-4 strawberries diced - 1 small zucchini diced - half apple diced - 3/4 yellow bell pepper diced - 2 walnuts (small pieces) For Seasoning - fresh cracked pepper, to taste - dried Italian herbs (thyme, rosemary, oregano) - 1/4 cup orange juice - flax seeds or chia seeds - extra virgin olive oil or flax seed oil In a large bowl add all the ingredients and gently toss.
